If you don't like parsnips...

...this might not be the post for you you should give them a try like this!

As my blog name would suggest, I love parsnips. They are the thing that always runs out quickest at Christmas lunch (my Mum, my Grandma and I all fight over them!) and they are just delicious. Luckily Liam loves them too, and also says his Mum never cooks enough of them at Christmas!

We never seem to cook them very often throughout the year though, especially now I don't cook meat. Last night I changed that though, using this recipe for honey roast parsnips. The recipe said to just use 1 large parsnip per person, but I used the whole 500g bag...love them!

Good excuse to use one of my new knives!

The recipe uses butter, brown sugar and honey so it certainly produced sweeter parsnips than I'm used to! They were divine though - almost candied. A good way to make yourself like parsnips, especially if you have a sweet tooth (Maria, I'm looking at you!!). I love parsnips anyway, pretty much however they are cooked. My Mum usually roasts them with maple syrup at Christmas time, but I equally like them just roasted with a bit of oil. I quite like them in stews too, but definitely prefer them roasted - it seems to bring out their natural sweetness, and I love the crispy outsides.

The extra sweetness of these went perfectly with the rest of last night's meal - a strongly flavoured blue cheese souffle (that Mum bought in M&S) and some edamame beans to freshen the plate up a bit.

The souffle did rise...but then sunk whilst I was faffing about!

Liam commented that this tasted like a restaurant meal - not bad for something that was really just using up things from the fridge/freezer! The children ate random freezer leftovers earlier in the evening as they were tired, so probably part of the reason it tasted so nice was that we ate once they were asleep. Being able to eat a meal in peace = bliss!! :)

Do you like parsnips? Are there any things you don't like that most people do? I can't stand baked beans which seems to be unusual. I remember growing up, my friends' mothers never knew what to feed me because baked beans seemed to be the standard! I don't like the texture of any beans now, which is no doubt related, but I like the taste of regular beans if they're mashed/pureed in houmous, bean burgers etc. Not a "common" food, but I also can't stand the texture of chia seeds. I've tried so many times to like them, but it's not happening. I have issues with textures it seems!

Right, quite a quick post from me today. Well, it seems like that to me in comparison to my usual waffly posts anyway! We're off to Bath this weekend, as soon as Liam gets home from work tonight, and I still have so much packing/organising to do!

Mother's Day

I hope you've all had a great day if you've been celebrating! Mine has been spent mainly with my children, and then this afternoon we took a cake over to my Mum's to share with my Mum, my Grandma and my sister...I love having my family all in the same town, makes getting together so much easier! :)

Liam left for work just before 7am this morning, and unfortunately the children got me up soon after...no breakfast in bed for me! I did however get a present that daughter had made at school (yey for her going back just for Friday morning - looks like that was good timing for making Mother's Day things!!)...a card with a rhyme and a gingerbread lady cookie...


I tried not to think about all the 4/5 year olds' hands that had gone into making this!! We shared it after breakfast (well, a latte for me, I was too tired to eat proper food) and it was actually surprisingly tasty :)

Once baby went for his nap, it was then time to bake... As Liam and the fussier of my sisters weren't going to be there this afternoon, I decided to make a slightly more adventurous cake than I'd usually be able to, and I'm relieved pleased to say it turned out brilliantly!! Parsnip and Maple Syrup Cake... I followed the recipe exactly except I used cinnamon instead of mixed spice as I wasn't going to buy a jar just for 2 tsp! Feel free to skip to nearer the bottom if you don't want to see step-by-step photos...not sure why I'm posting them (yawn!) except I took the effort to take them so may as well make use of them!!

First it was time to prepare the add-ins...


there was a lot of grating! Grated parsnips, grated apple, zest and juice of the orange, and chopped pecans...


*Note to self: next time grate the apple last so it doesn't go brown...not that it mattered for the cake, but it didn't look as pretty for the photo!!!

I then melted the butter, brown sugar and maple syrup...


in the microwave, to make washing up easier!

before whisking in the eggs and adding the flour, baking powder and cinnamon...


all stirred together...


then tip in the parsnip, apple, orange and pecans...


all mixed together, looked so good...


Into the sandwich tins...I didn't actually measure them as they're the only sandwich tins I have...they were a bit too full though so I'm thinking they're maybe a bit smaller than 20cm!!


and into the oven for 45 minutes...


The recipe is confusing as there are 2 different times in it, but as the comments suggest, 45 minutes is definitely the right one! So after 45 minutes they looked like this...


I think I should have let them cool a bit more in the tin before turning them out as they fell apart a bit, still salvageable though! :)

It was then time for lunch while the cakes cooled. Liam came home on his lunch break but we were both too tired to cook properly so just had cheese on toast...


I obviously had twice this amount!

Liam also brought home some flowers for the children to give me which I wasn't expecting at all - with daughter being in hospital etc we haven't been very organised lately so were just pleased she'd made something at school!


Tulips are my favourites, so pretty! :) apparently Liam was standing by the flowers being indecisive about colours - purple are my favourite and one of the checkout assistants suggested that orange would go well...I can't decide if she was right or not?!!


Obviously they haven't stayed on my cooker! Instead they're sitting on the dining table making the room look pretty, yey, I love having flowers in the house!

Liam also got my some Nak'd bars from him (I think he was feeling guilty for not having arranged anything earlier!!) a bit strange as I'm clearly not his mother, but hey, I won't complain about being given Nak'd bars! :)


I'm actually quite impressed that he bought me these rather than a standard box of chocolates...he obviously does occasionally pay attention to what I eat!! :)

Anyway...back to the cake...

In my hurry to get it ready, I actually forgot to take a photo of the filling! It was really simple though, just a 250g tub of mascarpone mixed with 3-4tbsp of maple syrup...


I was a bit worried that the mix would be a bit too runny to fill the cake, but actually once it was on the cake it was much sturdier than it had seemed in the bowl...


Ignore the dip bottom left - baby managed to grab a chunk out of it while it was on the counter!!! Still looked good enough to eat though...


I dusted it with icing sugar just before taking it round to my Mum's...managing to make a bit of a mess in the process!


Worth it in the end...


This was really tasty. My little sister (who I thought was less fussy than my other sister!) refused to try it, but everyone else - my Mum, Mum's partner, my Grandma, daughter and baby - really enjoyed it...


it didn't taste of parsnip at all, but had a lovely texture, next time I would put more pecans in it to give extra crunch. I was a bit worried about the maple-mascarpone not being sweet enough, but it went really well, yum. Although at 697 calories per slice (1/8th which is pretty much what most of us had) it's not one to be made too often!! When Liam finished work he came round and, slightly reluctantly, agreed to try it (he doesn't like carrot cake so wasn't expecting to like this) and actually liked it so much that he brought some of the leftovers home with him...success!! :)

Dinner tonight was nothing really worth writing about - we didn't get home from Mum's until past the children's bedtime so they had cereal and then we had meat-free burgers, chips and corn on the cob...


Healthy eating starts again tomorrow??! On a more serious note, I must start going to the gym again - I haven't been since daughter became ill about 3 weeks ago! Her antibiotics course finished this morning and her dressing came off her neck this evening so no more excuses. Liam oh-so-subtly pointed out the other day that seeing as I don't seem to be able to stick to a lower calorie allowance because I love food too much, I need to earn more calories by doing exercise so I can eat more. So true!

New Year, New Blog

Happy New Year Everyone! As it is the 1st of January 2011, I thought it was as good a time as any to launch my new blog...hopefully not a yearly occurrence but for various reasons I had to leave my old blog behind and relocate to this name! Hopefully those of you who read my old blog will recognise my posting style/the layout of my blog. Anyway, technicalities over, on with the post...!

I was totally lacking in inspiration for a name for my new blog!! The first part, "Porridge", is a huge part of my new, healthier life...I love a big bowl of porridge to get my day off to a great start!

After going out for a curry (king prawn pasanda, divine) and a few drinks last night to celebrate New Year's Eve, I needed some fruit in my porridge this morning to give me some much needed vitamins! I made up my porridge with oats, Kara coconut milk, a little vanilla extract and a lot of frozen forest fruits. I then topped it with Dorset Cereals chocolate granola with macadamia nuts, plus my last square of Lindt dark chocolate with sea salt for extra chocolateyness! This porridge was a lovely pink colour...my daughter thought it looked great!

Apologies for the lighting on this photo...I so need a new camera this year! :) This porridge tasted great, not that chocolatey but it had a lovely freshness to it, with a bit of crunch from the granola for extra interest...


not bad for a bowl that started off with me not knowing what to put in it...I will definitely be using frozen fruit more in future...health without the hassle...plus both my freezers are bursting at the seams so need to start using up what's in them!

So...the other part of my blog title, "Parsnips", bit more random this one as, whilst I do love parsnips, I don't find myself eating them that often. Like I say, I was really lacking in inspiration!!

Some of you may remember from my old blog's Christmas post that Liam brought home lots of freebies from work on Christmas Eve, including a giant turkey...


and today was the day to cook said turkey! We had a few of our friends and family who hadn't made it on Christmas Day over for dinner (as well as my Mum who helped me cook it), it was a lovely 2nd Christmas :) and of course, no roast is complete without parsnips...


these were roasted in turkey fat with the carrots and potatoes. I'm so annoyed with myself - with all the cooking and guests arriving, I didn't take any more photos after this...bad blogger! The parsnips looked much better than this once roasted obviously!! I didn't even take a photo of my plate so will have to cheat and use the photo of the very similar meal a week ago...


today's meal had broccoli instead of red cabbage and lots of parsnips instead of roast potatoes (the benefit of being one of the chefs, did I mention I love roast parsnips?!!) delicious! :)

No Christmas pudding today but Mum did bring her delicious chocolate torte...

I think it is a Delia Smith recipe - I will have to get the details off her someday - but it is basically lots of melted chocolate, glycerine, rum and lightly whipped double cream, with a crust made from crushed amaretti biscuits and left in the fridge to set...simple, tasty, but not so healthy!! An occasional yummy treat...we think we may have this as the dessert at our wedding, can't wait! :)

Bit of an odd post today, I hope to get back in to my usual routine of posting over the next few days now that the "introduction" is out the way! Have any of you made any New Year's Resolutions this year? I've made a few general ones:
  • lose 1-1.5 stone by my wedding in July (would be less but gained 9 lbs in December, oops!) - weight loss wouldn't usually be my main aim but I have gone so overboard with my eating this last month, so now I'm very aware of my need to lose weight as none of my clothes fit properly!! I enjoyed every mouthful at the time, but will try to be a little bit more restrained with my portion sizes from now on! 
  • exercise (gym/swimming) 3 times a week - I try to do this anyway but have struggled in the winter
  • drink at least 2 litres of water each day - again, I've been struggling with this lately
  • do more housework - Liam will be pleased!!
And slightly more specific ones until April:
  •  no snacks except fruit & veg - aim to achieve this 5 days a week
  • exercise - 3 days a week
  • at least half an hour reading - every day please...the peace would be lovely!!
for these goals I will be putting money into a jar each time I manage it to sponsor a family member who is running the London Marathon in April...a way to support him and improve my health at the same time. The no snacking aim will be the hardest for me, but will also help with my weight loss. Not starting properly until Thursday though - want to enjoy my baby's 1st birthday first...will try to reduce my food consumption in the meantime though!!
