Yep, I made the most of baby's nap this morning to get the blender out and first make coconut butter...
before turning it into the fudge, I went with the cocoa version and sweetened it with a tbsp of date syrup. This is seriously tasty... I've eaten 8 pieces today, whoops!
I also enjoyed a 2nd hazelnut latte and half an hour or so reading my kindle...I love
No "proper" breakfast for me today as the lattes and fudge tastings filled me up...but I figure the banana and the coconut kinda counts right?!! :) the hazelnut coffee tasted lovely too, looking forward to trying some of the other flavours before too long!
After 2.5 hours (bliss!) baby woke up and it was time to get on with the day...
While he ate his lunch, I decided a bit of kitchen re-organising (aka washing up avoiding!) was in order. The aim: to create at least half a shelf worth of space for "my foods"...ta da!
it's a start, but considering I gave in and placed a Goodness Direct order that is due on Thursday, I think I'll need a bit more space!
I also cleaned the rest of the kitchen...
and did (3 loads!) of washing up...
I was on a roll today! Don't think Liam's ever come home to the kitchen looking so tidy!!
After I'd finished cleaning and baby had finished eating, it was time for him to have another nap (he is such a snooze monster at the moment!) and me to have my lunch. Avocado with prawn mayonnaise...
I love this, such a good combination!
I also cooked tonight's dinner in advance (hence 3 loads of washing up today) with the intention of going to the gym when Liam got home. The gym didn't happen (sigh) but at least it made the evening routine a little easier to know that dinner was already waiting in the fridge. Turkey and sweetcorn white sauce (ie made from a roux) pasta bake, with a tub of grated cheese on the side...
ready to be sprinkled over the top before placing in the oven half an hour before we wanted to eat...
simple but good, I love leftover roast meat to make quick, tasty meals...
I went back for seconds too - the only one of us who hadn't spoilt their appetite by eating an hour or so before dinner!
This evening I had my 8th piece of fudge today, plus a couple of Mama's Pea's choc chip dough balls...rubbish photo but delicious treat...
these dough balls were straight from the freezer...I kind of sucked/nibbled on them coz I was too impatient to wait for them to defrost!!
A good day today, I feel I've been really productive (for me!) + yummy food = happy Lucy!

ReplyDeleteAnd i love your teapot and cupcake tin! I only have 3 thin food cupboards (probably the size of one normal one) so I have stuff in boxes piled high on the fridge! I am terrible for it! :)

ReplyDeleteThanks Maria, I have a little brown teapot to match the green one too...I buy way too many kitchen things! I'm really lucky that we have a floor to ceiling "cupboard" that is huge, lots of space to store our goodies that the baby can't (yet!) get to! :)
