Strawberry Coconut Pancakes

This morning, as with most mornings, I woke up craving something sweet. I haven't had pancakes for a good few days (!) so it was time to get my frying pan out again!


I love the combination of strawberry and coconut. I made strawberry coconut muffins last week and, as I still have lots of strawberries left, I decided to use some in this morning's pancakes.

As with my pumpkin pancakes, today's pancakes are loosely based on Chelsey's blueberry pancakes recipe.


Strawberry Coconut Pancakes
(serves 1)
  • 30g plain flour
  • 30g oats
  • 1/4 tsp baking powder
  • 1 egg
  • 15g coconut butter
  • 5g coconut oil
  • 45ml Kara coconut milk (or other milk)
  • 50g strawberries, chopped into little pieces
  • Optional: 10-15g sugar if you want your pancakes sweeter - I didn't use any sugar as I knew I'd be drowning my pancakes in syrup anyway!
  1. If the coconut butter and coconut oil aren't already liquid, gently melt them in the microwave/in a pan.
  2. In a bowl, mix flour, oats, baking powder and sugar (if using).
  3. Add egg, melted coconut butter and coconut oil, and milk. Stir to combine.
  4. Gently fold in chopped strawberries.
  5. Heat a pan with a little more oil.
  6. Drop the batter into the pan to make three small pancakes.
  7. Cook over a medium heat until bubbles appear on the top of your pancake.
  8. Flip, and cook the other side for a couple of minutes.
  9. Serve. Top with whatever you'd like - I used more strawberries, desiccated coconut and agave nectar.

These were delicious - thick and fluffy, with a slightly sweetness from the strawberries. I would have liked the coconut flavour to be stronger, but that was easily fixed by the desiccated coconut on top...next time I'd probably top with coconut butter as well.


Mmm, I love pancakes. Such a nice way to start the weekend. I've been really spoilt the last 6 weeks or so, getting to have relaxed breakfasts every morning, but once school starts back on Monday I will have to stick to quicker breakfasts during the week I think. Either that, or have breakfasts after the school run, but that was a habit I was trying to get out of at the end of last term.

What are your favourite quick breakfasts for when you have to rush in the mornings? When I'm trying to get the children ready for school, I struggle to have time to make smoothies, pancakes etc so often get drawn in to cold cereal or toast, which I don't find as filling. Maybe the solution is to have fruit or something to keep me going before the school run, and then proper breakfast after, but some days I go straight out in the mornings after dropping Izzy at school, so don't have that option. Aaargh, the school holidays have gone way too quick, I'm not ready for school to start back again yet!!

  1. Tell me about it- the holidays go by so fast! I tend to have porridge which I make (cold)the night before and leave in the fridge to thicken overnight, then I cook it in the morning (2.20 in the microwave) while I empty the dishwasher! Or I have fruit with yoghurt and muesli which I find more filling than plain cereal.

  2. Yes, I can imagine holidays go by way too fast for teachers as well! Especially as you were away for so much of it!

    I will give your porridge idea a try, thanks. I've tried overnight oats before, but I hated them cold and then kind of heated them up half heartedly just to take the chill off. But if I made it the night before and then heated it up properly in the morning, it would save some time.

    Luckily Liam has Mondays off work at the moment anyway, so I'll be able to ease myself gently back into the school routine next week!
