Goodness Direct Order + WIAW

This morning, bright and early at 8.45am, my Goodness Direct order arrived! Such a relief to not have to wait in all day for it!! :)

Fooood!!! I went a bit mad on the gluten-free foods! Brown rice pasta (my local supermarket only seems to sell white gf pastas), chocolate covered pretzels, waffles, sweet bread rolls and chocolate tiffin...


Conscious chocolate bars...


and finally raw chocolate covered mulberries...


Mmmm. It all looks so good! Unfortunately, in my "aaaargh, I don't have long left to fit into my wedding dress" state of mind, I had decided that I needed to put all sweet treats away until after the wedding.

I packed up a box including the pretzels, tiffin, Conscious chocolate and chocolate covered mulberries from above, plus various Nakd bars, 9bars, Eat Natural bars, sesame snaps and chocolate...


I've asked Liam to hide the box for me until after we get back from honeymoon. Goodbye sugary friends...see you in a few weeks!!

As my Goodness Direct order arrived so early, I made the most of one of the new products for breakfast...gluten-free waffles!
 
 

Paired with mango (with a squeeze of the lime that came in the pack, plus a drizzle of agave nectar) and some of my choco-coco-brazil nut butter, this made an amazing breakfast!


Best start to the day! I should have ordered more than one pack of waffles!! I loved the sweet (agave) and sour (lime) mango on the side as well, freshened the whole plate up!

As seems to be the norm in these last few weeks, we had various wedding related activities to do today. A trip to the wine shop to order all the wine and fizz for the wedding, another visit to the venue as my Dad was visiting and hadn't seen it before, and my Mum and I also went to pick up my wedding dress! With all this going on, I didn't have time for lunch so my Mum and I went for coffee after we'd completed all our errands. Despite what I said yesterday about it being unlikely there would be gluten-free options in my small town, we came across a cafe with a sign in the window saying they sold gluten-free cakes and soy milk. I was expecting there to be only one or two options but they had gluten-free carrot cake, chocolate fudge cake, chocolate caramel shortbread, and scones, plus pre-packed cookies! Not only that, but their gf cakes were their only versions available of carrot cake, chocolate fudge cake etc, so I figured it had to be good to stand up to non-gf cakes!

I had a slice of carrot cake and a hazelnut latte.


The cake was great. A little crumbly, but with a lovely flavour and a yummy icing on top!


Cake perhaps isn't the healthiest of lunches, but I'll definitely be returning to the cafe...I want to try out the scones next!

Despite having his usual naps, baby was super tired today! It meant he was nice and cuddly though, he's so cute when he's tired!!


For dinner, I wanted some quick to make and/or minimal effort. I fancied something with lots of veggies, and pasta is always a winner...

Ratatouille Sauce, served with pasta
(serves 3)
  • 2 peppers, chopped into bite-sized pieces
  • 3 courgettes, chopped into thick slices
  • 3 red onions, quartered
  • 10-15g coconut oil
  • 500g passata
  • 2-3 cloves garlic, crushed
  • pasta (I cooked 150g regular pasta for Liam + 2 children, and 65g brown rice pasta for me, but cook however much you usually eat
  • cheese/nutritional yeast, to taste (I had nutritional yeast, others had grated cheddar)
First roast the vegetables in the coconut oil for approx 30 minutes at 200C...


Pretty colours! Once the vegetables are almost ready, put the pasta on to cook (depending on how long your pasta takes, you want it to be ready about 5 minutes after the vegetables).

When the vegetables are roasted, bring them onto the hob and add the passata and garlic. Simmer over a low heat until the pasta is ready.


Once all cooked, drain the pasta, top with sauce and cheese/nutritional yeast, and enjoy!


This was really tasty, the vegetables provided lots of different flavours and I liked the nutritional yeast with it too. Pasta is one of my favourite quick week-day meals, nice when it can be good for us all too!

I don't think I'm quite done eating tonight! I still feel peckish, think I need to find something sweet to tell my tummy that today is over!! Off to the kitchen I go!

  1. I count myself really lucky that I can eat what I want, but I have noticed that there's a lot more gluten-free stuff around now. I went to a post Italian last week that offered gluten free bread and pasta.

  3. Yes, I've been really impressed by all the gluten-free foods I've tried so far, they taste pretty good! I haven't been avoiding gluten for long, but as I have a hospital appt coming up in a few weeks for something kinda related, I decided to give gluten-free eating a go to see if it made any difference. There do seem to be a lot of gluten-free foods available these days, eating at home isn't much harder than when I ate gluten, but I imagine eating out gets a bit repetitive after a while.

    I'm jealous of my order too...looking forward to "allowing" myself to eat the chocolate etc once I get back from honeymoon!!

  5. You had carrot cake for lunch?! ok we can officially be bff now b/c that is totally something I would do (ok ive done it) and also the whole "hide the box of treats" bit... so guilty of that as well. it sounds silly to some peeps but I know its brilliant! <3

  7. Ahhhh I'm so jealous of your Goodness Direct order! I can't bring myself to do one until I've moved house in August! I'm a nomad up until then!

    Your ratatouille looked yummy too. I've only had it cooked by my friend once before, I definitely think I'm going to have to try it!
