Smoothie Loving!

Liam must have been feeling in a particularly lovely mood yesterday!

Not only did he come home from work with (reduced) flowers...


...and a (reduced) raspberry & white chocolate cupcake...


...but he also made (& photographed!) me a smoothie for dinner once the children were in bed!


Poor guy was rooting around the freezer for ages - I'd first requested frozen blueberries in the smoothie...no joy, so then I suggested frozen raspberries...nope, in the end he went with frozen mixed berries!

Liam's Lovely Peanutty Smoothie
  • 1 banana
  • 30g spinach
  • 80g frozen mixed berries
  • 200ml milk
  • quarter cup peanut flour
  • 5 drops vanilla stevia
  • 10g sweet freedom
  • large pinch xanthan gum
Toppings:
  • peanut flour sauce (peanut flour + milk + sweet freedom)
  • blueberries
  • granola
I didn't realise until after I'd eaten it - when I saw the photos he'd taken - that he'd made the peanut flour sauce into a heart shape, awww, bless, thanks Liam!


This was delicious. I loved the extra nutty taste the peanut flour gave to the smoothie. So delicious in fact, that when I showed a photo to Izzy this morning, she wanted the same for breakfast! Obviously we made a lot more of it (slight overspill of frozen berries meant making even more than I'd intended!)


  • 300g frozen mixed berries
  • 75g spinach
  • 1 banana (our last one so couldn't add extra!)
  • 70g peanut flour
  • 350ml milk
  • 40g sweet freedom
  • large pinch xanthan gum
Considering Izzy had requested that we have the same toppings as I'd had last night, when she asked if we could have some "round plum-y things" on top, I'd assumed she either meant the blueberries I'd had, or the plums that are sitting on the counter. But no, she meant nectarines! So chopped nectarine, blueberries, peanut flour sauce, and a bit of granola for her...


A bit more purple than last night's version, but we both still loved it. I was really impressed actually - often when we have smoothies, Izzy will get bored full half way through (when all the toppings are gone!) but today she ate it all! There was still some leftover though, so I've put that in the freezer for another day...


I was just saying yesterday to Sarah, on Twitter, that I hardly ever have any leftovers to put in the freezer these days, so I was quite excited to have some leftover smoothie (!!) I figure these can either be re-used in future smoothies or made into some kind of snack, we shall see.

Do you find yourself with leftovers often? What do you do with them? I don't often have leftovers these days as between the 4 of us we usually eat everything! I like having meals in the freezer though for days when I'm too tired to cook. Or sometimes I save the leftovers in the fridge and eat them again the next day, hopefully with a few new additions. I used to batch cook loads, but (I'm blaming Liam for this!!) usually when I cook what I think will be enough for a couple of extra freezer portions, Liam decides he wants a second helping! I should be grateful he likes my cooking I suppose!! :)

I'll be back again later with a re-cap of the first few days when we went away to Woolacombe last weekend, but I couldn't resist posting about the smoothies to brighten up this morning...it's so dreary out there! Have a great day everyone!

    What a lucky gal you are. The heart-shaped peanut sauce was adorable, too. *sigh* :)

    It's a smoothie kind of day! I'm sitting here sucking down my green monster... it's a green as the grass, but delicious!

  4. Hehe, yes, he is very sweet (sometimes!), bless him!

    I did feel a bit guilty that I hadn't noticed the heart on my smoothie, but in my defence he gave the bowl to me sideways, so it wasn't until I saw the photos that I saw it the right way round!
