These chocolate cupcakes each have a mini creme egg inside them - idea from My Baking Addiction - I hope they turn out ok, my cupcake mix barely covered the tops of the creme eggs so you can still see some chocolatey gooeyness at the top of the cakes. That will be covered up by the icing I'll be doing shortly, but fingers crossed freezing the creme eggs has helped them to retain some of their form during cooking! I'll post pics of them iced, and hopefully also cut open, tomorrow!
This afternoon I also baked banana muffins to have for breakfast tomorrow...
Luckily this recipe made the full 12 muffin batch plus 3 mini spares, so I got to eat one this evening. So good...
I love this banana muffins, I make these quite regularly, especially as Liam, who doesn't usually like fruit in baking, loves these - so easy to put in the freezer for a quick snack! The recipe is from "Muffins Fast and Fantastic" by Susan Reimer if you're interested. I've made lots of different muffins from that book and it's never let me down yet!
In non-baking news, today's meals have been really yummy :) I've already posted about this morning's Carrot Cake Smoothie, yum. The morning was then spent going to Lidl and Waitrose to buy various needed ingredients plus the usual Saturday shopping. Lunch was decided upon whilst we were in Waitrose... We had various sides...

I went back for lots more of everything except the bean salad, which I wasn't keen on, but then considering I only really like beans when mashed I don't know why I thought I would like it...something about their texture just doesn't do it for me, bleugh. The rest of it was delicious though, the camembert was so gooey...
After these photos were taken, I got stuck in with dipping my carrot sticks etc into the cheese...a perfect sharing lunch! :)
While the children napped, I went down town to get the last of my baking ingredients. I popped in to see my Dad and little sister who had just got back from Portugal today (poor them, the weather has been grey and rainy all week there, whilst we've been having glorious sunshine here...not what you want when you go on holiday!) and ended up chatting to them for over an hour, so by the time I got back it was time to get started on dinner.
Tonight was a made-up creation by me. It wasn't perfect, but pretty good so I'll give the recipe with suggestions for possible changes...
Roast Pepper, Goat's Cheese and Pesto Open Lasagne
(serves 3)
- 3 peppers
- 1-2 tsp oil
- 6 fresh lasagne sheets, cut in half
- Approx 100g goat's cheese, sliced (enough for 12 slices)
- 60g pesto + approx 1 tbsp oil added if needed
Once the peppers are ready/almost ready, cook the fresh lasagne sheets in boiling water for 2-3 minutes, and also heat the pesto and oil to make a sauce. No photos of the assembly as I didn't want the food to get too cold, but on each plate I layered... 1 half sheet lasagne - 2 pieces roast pepper - lasagne - 3 slices goat's cheese - lasagne - 2 pieces roast pepper - lasagne - 1 slice goat's cheese - pesto sauce...

This was tasty but there were a few changes I'd make next time. The sauce didn't quite work, it wasn't really sauce-like enough, but next time I would definitely put it in between each layer rather than just on top. Having said that, because I'd mixed some oil in, the basil oil did mingle between the layers so it wasn't as bad as it could've been. This also wasn't enough for a meal so next time I will cook some veg or something on the side. Having said that, there weren't as many changes as I thought there'd be...for a first attempt at open lasagne, especially without following a recipe, it was pretty good, if I do say so myself!
Anyway, enough of blowing my own trumpet, the cakes are now cool enough to go ice! If you're not on Twitter, you'll have missed my announcement this afternoon that I have finally put a recipe page up on my blog...
